Not too many trees will grow that large while in a pot.
Your best bets may be Ficus benjamina, Magnolia grandiflora or Tristania.
In a pot, even though i can’t stand them….Ficus is your best bet.

Being that you want it evergreen… i’d suggest Hemlock. Not sure if you’re farmiliar with that or if you even have that around in California (i’m in South Carolina) but Hemlock is a beautiful evergreen and makes LITTLE pine cones usually no bigger than an inch tall. It isn’t an umbrella tree, so you’d have to trim it… but it SHOULD fit into a large pot and be easily trimmable, since the branches don’t branch up and they go nearly straight out. hope i was of some help.
